BBQ Roasted Salmon
July 10, 2023This recipe is intended for patients who have successfully completed the Pureed phase and are in the Soft Solid stage.
INGREDIENTS
- 4 salmon fillets (4-6 ounces) *a 6oz raw salmon fillet results in 4oz cooked fillet
- 1/4 cup diet, sugar-free pineapple juice
- 2 tablespoons lemon juice
- 2 tablespoons brown sugar substitute
- 4 teaspoons chili powder
- 2 teaspoons grated lemon rind
- 3/4 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
DIRECTIONS
- preheat oven to 400 degrees
- combine pineapple and lemon juice and pour over salmon
- marinate salmon for one hour
- combine brown sugar, chili powder, lemon rind, cumin, salt, and cinnamon
- rub spice mixture on salmon
- place salmon fillets in a baking dish coated with cooking spray
- bake for 12-15 minutes
