Chilled Creamy Tomato Soup
July 10, 2023This recipe is intended for patients who have successfully completed the Full Liquid phase and are in the Pureed phase.
INGREDIENTS
- 1 28-ounce can of whole, peeled tomatoes
- 1 cup plain, low-fat Greek yogurt
- 1 teaspoon ground cumin seed
- 2 teaspoons Worcestershire sauce
- 1 1/2 cups fresh basil
- 2 scoops Unjury unflavored protein powder
DIRECTIONS
- Puree tomatoes in a food processor or blender until smooth.
- Using a fine mesh strainer, strain over a bowl getting as much liquid as possible.
- Discard seeds and anything left in the strainer.
- Pour mixture back into food processor or blender.
- Add yogurt, cumin, Worcestershire sauce, and 1 cup of basil.
- Puree until smooth.
- For garnish, add mince remaining 1/2 cup of basil and sprinkle on each individual serving.
