Fajitas
July 10, 2023This recipe is intended for patients who have successfully completed the Soft Solid phase and are over eight weeks post-op.
INGREDIENTS
- 1 lbs. of lean meat (chicken, steak, pork) cut into small strips
- 1 onion cut into strips
- 1 bell pepper or peppers of your choice cut into strips
- 1 tbsp. olive oil
- Lettuce leaves
- 2 cloves of garlic chopped
- 1 tbsp. cumin
- 1 tbsp. chili powder
- 1 tbsp. oregano
- Juice from 2 lemons
- Toppings: salsa, avacado, guacamole, low fat cheese, tomatoes, olives
DIRECTIONS
- In a large bowl mix the meat, onion, garlic, pepper, lemon juice and spices together.
- Allow to marinate for as long as you wish.
- Heat a large pan on medium, adding the olive oil.
- Cook mixture thoroughly.
- Serve with lettuce leaves.
- Garnish according to taste.
