Slow Cooker Turkey Chili
This recipe is intended for patients who have successfully completed the Semi-Solid phase and are in the Soft Foods phase.
INGREDIENTS
- 1 Tbsp olive oil
- 1-pound ground turkey*
- 1 large onion, chopped
- 1 medium bell pepper, diced
- 1 can kidney beans (14.5oz), rinsed
- 1 can crushed tomatoes (28 oz)
- 1 cup chicken broth
- 1 tsp dried oregano
- 2 Tbsp ground cumin
- 2 Tbsp chili powder
- Salt and pepper to taste
*ground beef can be used in place of ground turkey (85% lean or higher)
DIRECTIONS
- In a non-stick skillet, heat olive oil over medium heat
- Add ground turkey and cook until browned, approximately 7 minutes
- Add ground turkey, onion, bell pepper, kidney beans, crushed tomatoes, chicken broth, oregano, cumin, and chili powder to a large slow cooker
- Cook on high for 3-4 hours or low for 6-7 hours
- Enjoy! (makes about 6 servings)
