This recipe is intended for patients who have successfully completed the Semi-Solid phase and are in the Soft Foods phase.

INGREDIENTS

  • 1 Tbsp olive oil
  • 1-pound ground turkey*
  • 1 large onion, chopped
  • 1 medium bell pepper, diced
  • 1 can kidney beans (14.5oz), rinsed
  • 1 can crushed tomatoes (28 oz)
  • 1 cup chicken broth
  • 1 tsp dried oregano
  • 2 Tbsp ground cumin
  • 2 Tbsp chili powder
  • Salt and pepper to taste

*ground beef can be used in place of ground turkey (85% lean or higher)

 

DIRECTIONS

  • In a non-stick skillet, heat olive oil over medium heat
  • Add ground turkey and cook until browned, approximately 7 minutes
  • Add ground turkey, onion, bell pepper, kidney beans, crushed tomatoes, chicken broth, oregano, cumin, and chili powder to a large slow cooker
  • Cook on high for 3-4 hours or low for 6-7 hours
  • Enjoy! (makes about 6 servings)
