Turkey Meatballs and Zoodles

This recipe is intended for patients who have successfully completed the Semi-Solid phase and are in the Soft Foods phase.
INGREDIENTS
- 1-pound ground turkey*
- 1/3 cup breadcrumbs
- 1 egg, whisked
- 1 small onion, diced
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic salt
- 1/4 cup reduced fat grated parmesan cheese
*ground beef can be used in place of ground turkey (85% lean or higher)
Zoodles*
- 2 medium size zucchinis
- 1/2 tsp salt
- 1/2 tsp pepper
*You can make your own zoodles or purchase them already prepared in the produce aisle or frozen aisle of the grocery store
DIRECTIONS
Meatballs
- Preheat oven to 400°F
- Line a large baking sheet with parchment paper (for easy cleanup!)
- In a large bowl, combine ground turkey, breadcrumbs, egg, onion, salt, pepper, garlic salt and parmesan cheese
- Mix ingredients together then form into balls approximately 1.5-2 Tbsp in size
- Place meatballs on parchment paper spaced evenly and bake for approximately 20-25 minutes. Meatballs should reach an internal temperature of 165°F before serving
Zoodles
- Cut zucchini in half and using a spiralizer, twist zucchini through to create zoodles that mimic spaghetti noodles.
- Toss zoodles with salt and pepper
- Sautee noodles in a non-stick pan over medium heat to soften, approximately 3 minutes
Serve turkey meatballs and zoodles alone or tossed with your favorite marinara sauce! (makes about 5 servings)
